Abstract

Goat cheese is one of the most nutritious products made from goat milk, which is essential for human consumption and is being produced in many countries in the world. However, cheese from goat milk is still quite new to Vietnamese consumers, especially those living in rural areas. To bring the product closer to consumers, along with product diversification by supplementing mulberry syrup for the purpose of creating good quality products to meet the consumer tastes. The subject of the study was to select the rate of mulberry syrup supplement to obtain good quality products. Results showed that the radio of mulberry syrup supplement was 20% (v/v) by volume
